January’s Pleasure
Good Afternoon Everyone,
We are in the midst of a January thaw. A little bit of snow, a little bit of freezing rain, and warmish temperatures. Unfortunately in many places of Vermont, no snow at all. Very sad! And certainly not welcome by the skiers and other snow enthusiasts.
Indoor fun
So, I decided it was time to get in the kitchen and start baking. I took a very long hiatus from the baking world when I sold Woodstock Cookies 10 years ago. I am now just beginning to get back into making bread and thought a blueberry pie would be a sweet treat given we have tons of frozen berries from this summer!
And Gunnar Gets Us Out of the House
We have been getting up to the fields on snowshoes. Great views and good exercise for us and the dog. He is so happy when we take him for walks. And I know it is good for me, keeps my head clear and my body moving.

Blueberry Pie recipe: I like to use as little sugar as possible so I make a simple syrup in a saucepan. Bring to a boil 2 cups of water, 1/2 cup of organic sugar (I often use 1/3 cup honey or maple syrup instead but it isn’t as syrupy then), and 2 tablespoons arrowroot. Sprinkle in a little cinnamon and add about 2-3 cups of frozen blueberries. Boil for 5 minutes or until thickened. Turn off heat then add another 4 cups berries. Stir it all up and use as pie filling or in a cobbler or just refrigerate in a bowl. This is good with yogurt and granola for breakfast or as a dessert with ice cream or homemake whipped cream. Enjoy.
